    1. Whisk the first 4 ingredients together with an electric mixer.
    2. Whisk in strawberries for about a minute, this will incorporate them into the ice cream smoothly.
    3. Fold in the chocolate chips.
    4. Pour mixture into a bread pan or container of choice. I line my bread pan with parchment paper so I can cover the ice cream to avoid freezer burn.
    5. Freeze for at least 6 hours.
    6. Before serving allow the ice cream to sit out at room temp for 5-10 minutes to soften. (This will make scooping a lot easier!)
    7. Enjoy!

    Instructions
    1. Pre-heat the oven to 350 degrees.
    2. In a large bowl combine dry ingredients. Stir to incorporate. Add in the remaining wet ingredients. Use an electric mixer to stir the ingredients together until the dough forms a ball. -IF the dough clumps together in little balls add in a little water, one tbsp at a time. -IF the dough is sticky, place in the refrigerator for about 10 minutes.
    3. Take a piece of the dough (about 2 tbsp in size) and roll it out between your hands. (Think playdough, and you're trying to make a snake.) HA. Place dough onto a parchment lined baking pan and continue the process.
    4. Brush on the olive oil on top of the breadsticks. Sprinkle the breadsticks with salt and garlic powder.
    5. Bake in the oven for about 12 minutes or until the top turns golden brown.
    Recipe Notes

This recipe makes 8-10 breadsticks depending on the size you roll them out to be. Keep in mind the breadsticks will expand in the oven so don't make them too large and don't place them too close together on the pan.

    1. Preheat oven to 375 degrees.
    2. Slice tomatoes into roughly 8 equal wedges and then quarter an onion. Place tomatoes and onion onto a sheet-pan. Drizzle with 2 tbsp of olive oil and a few sprinkles of salt. Spread the veggies out evenly and then bake for 1 hour.
    3. Meanwhile, place the remaining ingredients into a food processor.
    4. Once the veggies have cooked in the oven allow them to cool off for about 5-10 minutes before adding them into the food processor. Blend everything together until the sauce is to your desired consistency. (If you like it thick and chunky just pulse it a handful of times.)
    5. Pour sauce into a pot with a lid. On high heat, allow the sauce to reach a boil, then turn the heat down to low so the sauce can simmer for about 30 minuets.
    6. Serve and enjoy!

    2. Pour contents into saucepan and let it simmer on med-high until it starts to thicken. (The liquid will continue to thicken once you take it off the heat--so don't let it reduce down too much.)
    Lemon-Blueberry Pancakes
    1. Add all the ingredients (except coconut oil and blueberries) into your food processor. Blend until the batter is smooth. Fold in blueberries.
    2. In a large skillet on med-low, add in about 1 tsp of coconut oil and let it melt. (You are going to need to keep adding more coconut oil to the pan between each set of pancakes.) Allow the pan and oil to be nice and hot before adding the batter.
    3. Using a 1/4 measuring cup to scoop, pour batter onto skillet.
    4. After the pancakes begin to bubble on top, flip them over. After they have browned on both sides, put the pancakes aside and continue to cook the rest on the pan.
    5. Serve with your warm, lemon blueberry syrup and enjoy!
