    1. With a sharp knife, remove stem and thinly slice the brussel sprouts. Place brussel sprouts into serving bowl.
    2. Using a cheese grater, shred the apples. Place into serving bowl.
    3. Thinly chop the fennel and add it to the serving bowl.
    4. Sprinkle the walnuts and cranberries on top of the salad.
    Dressing
    1. In a blender or food processor, add all the ingredients to make the salad dressing.
    2. Blend the dressing on high until evenly combined the basil is broken down.
    3. Pour dressing over the salad, serve immediately.

    1. Pre-heat the oven to 450 degrees.
    2. Pan the chicken legs dry on both sides.
    3. Place the chicken on a parchment-lined sheet pan.

    1. Pre-heat oven to 325 degrees.
    2. Using a cheese grater, grate the zucchini.
    3. Wrap the zucchini in a thin towel and strain all the juices out. Get the zucchini as dry as possible!
    4. Add zucchini and remaining ingredients into a large bowl. Using an electric mixer, stir intermittently between ingredients.
    5. Pour half the batter into a bread pan. Set the remaining batter aside.
    6. For the streusel filling/topping: In a food processor, combine all the ingredients and process on low until there is a even, crumbly texture. (Don't process too long otherwise it will become sticky and fine.)
    7. Add half of the streusel on top of the zucchini bread batter.
    8. Pour the remaining batter on top of the filling and smooth over for an even layer.
    9. Sprinkle the remaining streusel over the bread.
    10. Bake for 50-55 minutes or until a toothpick runs clean.

    1. Pour raw almonds into a bowl. Pour water over them until the almonds are covered. Cover the bowl and allow them soak overnight.
    2. After the almonds have soaked, rinse them well using a strainer.
    3. Pour the rinsed almonds into a blender or food processor. Add 6 cups of water and blend until the almonds have completely broken down.
    4. Strain the almond milk through a nut milk bag or cheesecloth and pour into a wide container or bowl to catch all the milk. (I used a wide liquid measuring cup.)
    5. Set almond pulp aside and feel free to use it to make almond flour.
    6. Pour milk into serving container. Keep the top sealed and refrigerate for up to 5 days.

    Chia Seed Pudding
    1. Remove pits from cherries.
    2. Add all the ingredients (except chia seeds) for the chia seed pudding into a food processor. Process on high for about 30 seconds or until ingredients are combined. (You don't want to process it too long otherwise you want have chunks of cherries in the pudding.)
    3. Stir in the chia seeds.
    4. Pour mixture into a sealed container. Refrigerate overnight or for about 6 hours.
    Cherry Glaze
    1. Pit cherries and cut in half.
    2. Add cherries, honey, and water to a sauce pan. Turn the heat on high.
    3. Once the mixture starts to boil, reduce to med-high and continue to cook for 8 minutes.
    4. Allow cherry glaze to cool. Store in fridge in a sealed container.
    5. Once the chia seed pudding has set, serve topped with the cherry glaze.

    2. Slice the eggplant about 1 inch thick, creating about 6 circles.
    3. Cut a hole in the center of the eggplant about 1 inch in diameter. (see notes)
    4. Place eggplant on a parchment lined sheet pan. Brush eggplant with olive oil.
    5. Crack one egg into each eggplant hole.
    6. Sprinkle the eggs and eggplant with salt and pepper.
    7. Bake for about 15 minutes or until egg is at your desired consistency.
    8. Optional: garnish with chives, tomatoes and avocados.

    Recipe Notes

    I don't have a tiny circle cookie cutter to cut a hole in the center of the eggplant. If you do, great use it! Another way to do this is trace a tablespoon measuring spoon with a knife and the cut that out. I actually found using a children's liquid measuring cup for medicine is the perfect size, so you can try that too!
