- 4 cups shredded brussel sprouts
- 1 cup shredded apple
- 1/2 cup fresh fennel
- 1/2 cup Red onions
- 1/4 cup walnut pieces
- 1/4 cup Dried Cranberries
- 2 tbsps juice from an orange In a rut, orange juice will work too!
- 2 tbsps olive oil
- 2 tbsps Apple Cider Vinegar
- 2 tbps fresh chopped basil
- 1 pinch Salt
- 1 pinch Black pepper

- With a sharp knife, remove stem and thinly slice the brussel sprouts. Place brussel sprouts into serving bowl.
- Using a cheese grater, shred the apples. Place into serving bowl.
- Thinly chop the fennel and add it to the serving bowl.
- Sprinkle the walnuts and cranberries on top of the salad.
- In a blender or food processor, add all the ingredients to make the salad dressing.
- Blend the dressing on high until evenly combined the basil is broken down.
- Pour dressing over the salad, serve immediately.
