This paleo, Crispy Baked Chicken Leg Quarters recipe is simply incredible! This is one of the top classic dishes we make in our family. It is the easiest recipe to put together and the flavor and crisp tender skin is phenomenal!

Because this recipe is one of those that are just so simple, I feel kind of silly sharing. This isn’t a complex dish with fancy flavors or ingredients. But I think the simplicity of these paleo, Crispy Baked Chicken Leg Quarters is what makes this so special.

All you need is chicken, olive oil. salt and pepper. That’s it! You probably have these ingredients on hand right now. I have used other seasonings to switch this dish up (so you can play with that too) but I always seem to come back to the simple salt and pepper. Its simply amazing! This is a great sheet-pan dinner to whip up on any given busy night!

The simple combination of patting the chicken dry, the olive oil and the perfect oven temp gives the skin on the chicken a rich crispy, texture. It is SO good. I can’t wait for you to try!

Instructions
  1. Pre-heat the oven to 450 degrees.
  2. Pan the chicken legs dry on both sides.
  3. Place the chicken on a parchment-lined sheet pan.
  4. Brush the olive oil on top of the chicken.
  5. Sprinkle the chicken with salt and pepper.
  6. Place chicken in the oven and bake for 50-55 minutes or until skin is crisp and internal temp reaches 165 degrees.
  7. Allow chicken to rest for about 10 minutes before serving.
  8. Enjoy!

    I was searching for a chicken leg quarter recipe that didn’t involve a lot of steps or overly spiced that would obtain that “perfect”crispy skin and your recipe fits into exactly what I have searched for.
