Add all the ingredients (except chia seeds) for the chia seed pudding into a food processor. Process on high for about 30 seconds or until ingredients are combined. (You don’t want to process it too long otherwise you want have chunks of cherries in the pudding.)
Stir in the chia seeds.
Pour mixture into a sealed container. Refrigerate overnight or for about 6 hours.
Cherry Glaze
Pit cherries and cut in half.
Add cherries, honey, and water to a sauce pan. Turn the heat on high.
Once the mixture starts to boil, reduce to med-high and continue to cook for 8 minutes.
Allow cherry glaze to cool. Store in fridge in a sealed container.
Once the chia seed pudding has set, serve topped with the cherry glaze.
