Summertime is the perfect time to utilize the slow cooker. The oven just really heats up our kitchen. (We don’t have central AC so it gets really hot!) I enjoy using the slow cooker because its a great way to be hands-off for cooking with a busy schedule. Any shortcuts I can find I’m going to use. That’s why I love this paleo, Slow Cooker Fajita Bowls recipe. Tacos are perfect anytime of the year but I especially love them in the summer. The ingredients are in season and it’s such a fresh, fun meal!

My slow cooker fajita bowls are packed with flavor. I use a combo of chicken and beef as well as add in the typical peppers and onions. But then I add a little magic… I have this DELISH sauce I pour over the fajitas which adds such a fresh taste, one that you just crave during the summer. This “crema” as I call it, is easy to throw together–simply toss everything in a food processor and let it smooth out. EASY. Seriously, don’t forget to add it!

In my recipe I use 1.5 lbs of chicken and 1.5 lbs of beef. You most certainly can use all of one over the other or even use less if you’re cooking for fewer people or just don’t want the leftovers. Just follow the recipe all the same, slow cookers are flexible that way! 🙂 I also serve my fajitas over cauliflower rice which gives these fajitas a nice comfort-food flair.

My money saving tip for this recipe is to purchase your herbs by the bunch. When you go to the grocery store it is easy to find your herbs in a small, plastic container. They are overpriced and you never seem to get enough. You can find herbs by the bunch in a nearby section usually near other produce items you can bag yourself. I got 1/4 lb of cilantro for under $1.50. You can use this tip when shopping for any produce, it will always be cheaper when you buy it this way!

Also, this recipe is Paleo, Keto, and even Whole30 compliant, which makes this the perfect dish to serve for friends and family! Enjoy everyone!

Instructions
Slow Cooker Fajitas
  1. Add meat to slow cooker. (I add mine in and cut after cooking, however, you can cook the meat pre-cut if you prefer.)
  2. Pour half the package of taco seasoning on top of the meat.
  3. Slice peppers and onions. Place on top of meat in the slow cooker.
  4. Add the rest of the taco seasoning on top of the veggies and give it a stir.
  5. Cook on high for 5 hours.
  6. Cut the meat to your preference. Add the meat back into the slow cooker. Serve over cauliflower rice and top with Avocado lime crema.
Avocado Lime Crema
  1. Add all ingredients to food processor. Blend until smooth.
  2. Serve over fajitas or even use as a dip on the side!
  3. Enjoy!

    I love slow cooker meals in the summertime! I live in New York City without central air and if I can avoid heating up my apartment at all in the summer I do everything I can to avoid it. These fajita bowls look amazing and the fact that they are Paleo, Keto and Whole30 compliant makes them even more enticing. So excited to try these! Thanks for sharing.

    This recipe sounds delish! I have a question tho…for the crema it says just blend everything together(which I love!), does that mean the limes as a whole? Or the juice from them?

      Thank you! Just the juice of the lime. Feel free to use the zest of the lime if you want to intensify the flavor! 🙂
