How to Make Almond Meal from Almond Pulp

I like to use every last scrap in my kitchen. I try so hard not to waste any food. When our family was barely scraping by–poor, my hubby and I often went to bed hungry. So learning to use every bit of our food was a priority. Making our own almond milk was very economical but also learning how to use the pulp from the almonds to create more food was an incredible value!

My money saving tip is simple, find a way to utilize every last scrap in the kitchen! I keep a container by by side when cooking. I always add in vegetable and fruit scraps to it. I use these scraps to make my own kitchen sink salads, slaw, or even in an omelette. It goes without saying, but use up all your almonds, make your own almond milk, and use the pulp!

How to Make Almond Meal from Almond Pulp

First I want to be clear, Almond meal is NOT the same as almond flour. In sensitive baking, this will not work as a replacement. Almond flour comes from blanched almonds, which allows a fine consistency to the flour. So please don’t try swapping this almond meal for almond flour!

You Can Use Almond Meal Many Ways:

  • You can use the meal as a breading to coat meats and veggies. (Think panko!)
  • Add it to your favorite granola.
  • Use it in your smoothie!
  • Roll your protein balls in it!
  • Use it as a crust in your next quiche!
  • Top your chia seed pudding with almond meal + cinnamon!
  • Mix almond meal with coconut sugar and add it on top of fruit, then bake for a few minutes!

Instructions
  1. Pre-heat the oven to 170 degrees.
  2. Pour almond pulp on a large sheet pan, covered in parchment paper.
  3. Spread the almond pulp so that you have a nice, even layer.
  4. Dehydrate the almond flour for 3 hours. About every one hour, fold over the almond pulp, so the bottom gets to the top and smooth down any large chunks.
  5. After 3 hours, the almond pulp should be completely dried out. You can check by rolling it between your fingers.
  6. Pick up the parchment paper and roll the sides just a bit, to help guide the almond meal into a mason jar or sealed container.
  7. Store at room temp!
