No matter the time of year, I love a fresh salad. I also love the combination of apple + fennel! Apple and Fennel is a classic combo and when pairing it with brussel sprouts, it creates a level of sophistication. Which is nice to have for a salad you can throw together in minutes! This Brussel Sprout, Apple & Fennel Salad is a true gem.

This salad is made with Paleo, Keto, AIP, Vegan, and even Whole30! Making this the perfect dish to serve just about anyone!

Brussel Sprout, Apple & Fennel Salad

In this Brussel Sprout, Apple & Fennel Salad recipe, I include a salad dressing. Don’t be intimidated by making your own dressing–this one is super simple. You just throw the ingredients in a blender and then pour it over the salad. See? Easy!

I love this dressing because it is sweet and fresh! People can be picky about what kind of dressing they like over a salad. So when making this for a crowd I always stick to something sweet. This dressing has fresh, orange juice that really complements the apple + fennel combo well. My only tip, wait to pour over the dressing just before serving! If you want to make this dressing to keep on-hand at home, you can store it in the refrigerator for up to 4 days.

When I make salads for the whole family or even a group of people, I often whip up my own dressing. It is SO much cheaper to throw some ingredients in a blender or food processor and pour it over the salad. Paleo compliant dressing can be expensive, personally I don’t have the budget to use half a bottle to throw on a salad for our company or a crowd. This dressing is light, sweet and delish! It will also be great for your wallet, especially because you probably already have the ingredients on-hand!

Every time I make this salad it is a hit! This is one of those dishes I love to bring to pot lucks and parties. Its easy to throw together, you don’t have to worry about keeping it warm and the this salad will make you look like you’re a pro in the kitchen! Every time I have made this salad for a group of people, I am asked for the recipe. It’s fresh, unique and delish!

I love using in-season ingredients. Not only is this a great way to save money but it also helps your immune system! Did you know that the fresh, in season fruit and vegetables have even more nutrients than those that aren’t?

This is because of the process it takes to get them to your plate. (Usually from other countries or long distances that have the climate to grow the crops.) This requires the farmer to pick the crop before they are ripe; therefore, the fruits + veggies miss the opportunity for optimal nutrient development. This is why its best to purchase from your local farmer, who most likely harvests your fruits and veggies that very week.

Anyway, back to this delicious salad! Like we discussed earlier, there are a lot of benefits to eating in-season produce. This is the perfect salad for summer! Salad
  1. With a sharp knife, remove stem and thinly slice the brussel sprouts. Place brussel sprouts into serving bowl.
  2. Using a cheese grater, shred the apples. Place into serving bowl.
  3. Thinly chop the fennel and add it to the serving bowl.
  4. Sprinkle the walnuts and cranberries on top of the salad.
Dressing
  1. In a blender or food processor, add all the ingredients to make the salad dressing.
  2. Blend the dressing on high until evenly combined the basil is broken down.
  3. Pour dressing over the salad, serve immediately.

    My husband loves brussel sprouts so this is definitely a recipe I am going to have to try. Looks fantastic!
