Chia Porridge

There is something about having a warm breakfast in the morning I love the warmth of the chia seeds. We’ve all seen the refrigerated, overnight chia seed puddings. But in this recipe, you can whip up your breakfast with out waiting for the chia seeds to set (the heat will quicken the process) but also have that satisfying warm breakfast bowl. The pureed berries will add a touch of sweetness but also a wonderful balance of flavor added into the dish. This porridge is a so tasty and such a little goes a long way as it is truly filling!

 

This porridge is so satisfying. Its consistency reminds me of one of my childhood favorites, cream of wheat. I loved that stuff!! Now I get to make this version to my kids and they are just as obsessed! As crazy as we are for this porridge I am slightly even more obsessed with the health benefits for my family. Chia seeds are filled omega-3 fatty acids, antioxidants, protein, calcium and other great nutrients that make this superfood an addition you’ll want to add to your pantry!

 

You can be as creative as you want to be with this porridge as I am just giving you an example of one of our favorite blueberry versions. You can substitute pretty much any berry or add in fresh bananas or peaches, granola, chocolate, etc.

Serves 2:

What you’ll Need:
4 tbsp Chia Seeds
1/3 c blueberries
2/3 c almond milk
1 tsp cinnamon
1 tsp vanilla

How to Cook:
Pour chia seeds into small pot.
Add blueberries and almond mild to foodprossesor or blender and blend for about a minute to be sure all the blueberry skins have been pureed. Pour into pot.


Add in remaining ingredients and then whisk mixture on medium-low until the chia seeds thicken. (About 5 min.)


Pour porridge back into blender and then blend for a couple minuets. This helps unify the tenure so its not so lumpy. Pour back into pot or if you have a serving dish you like to use that can be heated. (I used my cast iron.) Return to medium heat for about 1-2 minuets.
Garnish with blueberries and *pumpkin seeds. Also this is when you can add in more almond milk for a more creamy texture.
