Have you ever seen that show semi-homemade on Food Network? If you haven’t no problem, it was a show about combining fresh ingredients along with store bought items to make the cooking process simpler. Well, this recipe is just that. I use three store bought pantry items that will cut down the time on your cooking and make this a simple, delicious, and even Paleo meal.
I love tacos! Who doesn’t? These pulled pork carnitas are going to bring your Taco Tuesday to a whole new level. Like I mentioned earlier, with a few easy shortcuts you’ll be able to make this in no time. There is no sacrifice on the flavors and each one of them pops out to make this your favorite fiesta for you and your fam!
Paleo Carnitas
What you’ll need:
1.5-2 lbs of pork roast
1/2 bottle of Paleo Sriracha Sauce
1 avocado
1/2 cup of salsa
1/4 cup of parsley
Tortilla chips
2 onions
2 T coconut oil
2 T coconut sugar
1 T apple cider vinegar
Pulled Pork:
In a large crockpot place pork roast down and cover with the sriracha sauce. Set on high for 5 hours.
When the 5 hours is up, shred the roast with a couple forks until it is completely broken apart.
Allow the pulled roast to sit for 5 minuets to absorb all the juices.
Caramelized Onions:
- When the roast is about 30 minuets from being ready, begin making the caramelized onions.
- In a large frying pan on medium heat, melt the coconut oil. Once melted add in chopped onions, coconut sugar and apple cider vinegar.
- Stir ingredients well so the onions are fully coated. Continue to stir occasionally until the onions are soft and golden brown.
Guacamole:
- For the guacamole combine one mashed avocado with salsa, cilantro and black pepper.
- Give it a good stir and that’s it! This is great to use for dipping and also for mixing in the carnitas.
Setting the Plate:
Combine the pulled pork and sides to a bowl and scoop with paleo chips.
