Salads are one of the simplest recipes to make. They are usually our lunch of choice. Both of our kids l o v e them so much so I’ll keep making salads to get in all those fresh, leafy greens in their diets!
I enjoy salads because there really isn’t a better way, in my opinion, to get in raw veggies. Not only is this a flavorful way but when you eat vegetables at their raw state, you are getting the maximum nutrient content. So opt in for more salads! It’s an easy to just throw them together for lunches like we usually do too!
Typically, my salads are what you call “kitchen sink salads”. I throw everything that’s kitchen, except for the sink, in a bowl. It always turns out delicious and it’s a great way to get left over roasted veggies or other produce laying around in the fridge used up as well. Some days call for a little more order and I’ll whip up something special so here it is guys, enjoy this fresh veggie delight:
This recipe is set up to serve one. Just simply double or triple, etc. into more serving bowls to accompany more people.
What you’ll need:
1 cup spinach
1 arugula
1/2 pear
2-3 strawberries
3 tbsp fresh fennel
3 tbsp chives
1/8 cup walnuts
How to Make:
Place leafy greens in bowl.
Chop up remaining fruits and veggies and place in bowl. To top off, sprinkle walnuts on top!
Need a Paleo dressing to top it off?
Add ingredients to a small bowl:
Juice 1/2 of one orange
1 tbsp apple cider vinegar
1 tbsp olive oil
1 tbsp honey
Chopped fresh parsley
Pepper
Whisk ingredients together in bowl and then drizzle over salad.
