Ice cream is the perfect summer treat! I have a DELISH Strawberry Chocolate Chip Ice Cream for you to get you through the warmest months.
This ice cream is rich, creamy and incredibly refreshing! The strawberry chunks POP in the vanilla base which just makes this treat a little extra divine. It’s free from dairy and refined sugars making this a healthy summertime option.
This recipe is quick and easy. No complicated ice cream maker required! You just throw everything in a bowl and let your electric mixer do the work!
My one tip for this ice cream is once you are ready to serve, allow it 5-10 minutes to soften at room temperature. This just makes scooping 100-X easier.
My savings tip to you is to purchase your strawberries frozen. They are typically WAY cheaper frozen. The cheapest place I have found them is Trader Joe’s and Aldi. Simply leave them thaw in the fridge overnight so they are soft and easy to dice.

- 1 can full fat coconut milk
- 1/4 cup Arrowroot Powder
- 1/3 cup Honey
- 1 tsp Vanilla
- dash Cinnamon
- 2 cups diced strawberries
- 1 cup chocolate chips
Ingredients

- Whisk the first 4 ingredients together with an electric mixer.
- Whisk in strawberries for about a minute, this will incorporate them into the ice cream smoothly.
- Fold in the chocolate chips.
- Pour mixture into a bread pan or container of choice. I line my bread pan with parchment paper so I can cover the ice cream to avoid freezer burn.
- Freeze for at least 6 hours.
- Before serving allow the ice cream to sit out at room temp for 5-10 minutes to soften. (This will make scooping a lot easier!)
- Enjoy!
