I just LOVE quiche. Eggs can become so blah day after day, this is a great way to mix! This is the perfect dish to treat-yo-self or even prepare for guests. I promise they will be raving!
This recipe is super flexible. So if you want to swap out some of that spinach for some broccoli, mushrooms, squash, ect. you totally can! Or you can switch up the meat. Like I said, its flexible, so make this savory breakfast dish your own!
A HUGE bonus for this recipe is that the ingredients are Whole30 compliant! Total winner. You can find the directions for the crust by following this link: http://paleobythepenny.com/recipe/perfect-pie-crust-recipe-for-sweet-or-savory-crust/ (Just be sure you use the “Basic Crust” recipe.) If you’re intimidated by making your own crust, don’t. The recipe is crazy easy and you can even make it up to three days ahead of time! One thing to note: the recipe for the pie crust is for two crusts. So you can save half the crust in the fridge, double this recipe and make more quiche, (this makes a great make-ahead-and-freeze meal), or you can simply have fun with the crust, cut out shapes and put more dough around the border. Either way, you have many possibilities to once again, make this your own.
This quiche is just one of those breakfast treats that will become part of tradition. You’ll love to make it for holidays, family and friends. It is a classic showstopper and is a great meal for everyone around the table. I can’t wait to hear how you enjoy it!

- Saute the onions over medium heat in coconut oil until golden brown.
- While the onions are cooking, crack eggs and place into a large bowl. Add salt and pepper, whisk together until combined.
- Remove sausage casing and chop into small pieces.( IF you purchased ground breakfast sausage, disregard last step.) Add sausage into the onions and stir occasionally.
- Once sausage starts to brown (about 3 minutes) add in chopped spinach. Give the veggies and sausage a good stir, then remove from heat.
- Add veggies and sausage into the bowl of eggs. Give it a stir and then pour into prepared pie crust. (Using the "Basic Crust" recipe in the above like.)
- Place quiche into a 350 degree oven. Bake for about 45 minutes or until the middle doesn't giggle or a toothpick comes out clean.
- Serve and Enjoy!
