I have a true treat for you all today. ‘Tis the season for baking and ALL the other wonderful treats this time of year! These cookies are crisp with a chewy center. Its just incredible that these chocolate chip cookies are paleo and can taste this PERFECT!
When my hubby and I were first married (and before I developed my food allergies) we enjoyed those break-and-bake chocolate chip cookies all the freaking time. This is when I joke and say how I gained my “newly-married 15”. Ha. Since I can no longer enjoy those cookies with him I was on a mission to create the perfect cookie. Guys, I did it! I honestly don’t think we could get any closer to those break-and-bake cookies. I seriously bet you would fool anyone that these aren’t made with processed sugar or flour. Its a Christmas Miracle!
Besides the amazing taste of these cookies, the best part is how easy they are. There are no complicated ingredients or instructions to make these bad boys. Just stir up the ingredients with an electric mixer, plop them on a cookie sheet and you’re done.
My money-saving tip for this recipe is simple. I use raw honey for things like tea or any other cooking that really doesn’t involve being heated. Raw, unfiltered honey is expensive but it holds more nutrients and even bee pollen that is amazing for the body. When we heat up the honey past its threshold it becomes processed and we lose all that. When I bake or do anything that will heat up my honey I always use the not-as-good, yet still, pure honey (found in liquid state). It is definitely opinion based, if you want to keep using the raw stuff in everything, good for you, go for it! However, if you are looking for a way to save money on something that just gets so expensive, this is what I recommend.
What You’ll Need:
- 1 cup of creamy almond butter
- 1/2 cup honey
- 1 egg
- 2 tbsp coconut oil, at room temperature
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup chocolate chips, I prefer Enjoy Life brand
How to Make:
- Pour almond butter and egg to a large bowl and let is cream together with an electric mixer.
- Add in the rest of the ingredients (except chocolate chips) until combined.
- Fold in chocolate chips.
- Place bowl in the fridge for 15 minuets.
- Scoop out 1 tsp worth of dough onto a parchment lined sheet pan. ***NOTE: It is tempting to go little larger when placing the cookie dough onto the pan but don’t. The cookies do expand and the quality in taste and crunch you get from from these cookies happen when that heat is able to circulate around them in the oven. I used a 1 tsp measuring spoon to scoop out the dough.
- Place cookies into a 350 degree oven for 8 minuets.
- When the cookies are out of the oven pull the cookies up with the parchment paper and place on a cooling rack and allow the cookies to cool and set.
- Enjoy!
