Instructions
  1. Pour almond butter and egg to a large bowl and let is cream together with an electric mixer.
  2. Add in the rest of the ingredients (except chocolate chips) until combined.
  3. Fold in chocolate chips.
  4. Place bowl in the fridge for 15 minuets.
  5. Scoop out 1 tsp worth of dough onto a parchment lined sheet pan.
  6. Place cookies into a 350 degree oven for 8 minuets.
  7. When the cookies are out of the oven pull the cookies up with the parchment paper and place on a cooling rack and allow the cookies to cool and set.

Recipe Notes

It is tempting to go little larger when placing the cookie dough onto the pan but don’t. The cookies do expand and the quality in taste and crunch you get from from these cookies happen when that heat is able to circulate around them in the oven. I used a 1 tsp measuring spoon to scoop out the dough.
