This is the ULTIMATE appetizer no matter what time of year! These Paleo Bacon Wrapped Apricots are incredibly Savory! They have a hint of sweetness, and the crisp of the bacon is perfection!
I love to have these at my home for appetizers for company. They are also wonderful around the holidays when you want a snack, but your glorious feast isn’t ready to be served yet.
These Paleo Bacon Wrapped Apricots couldn’t be easier to throw together and only take a few minutes! Also, you can prepare these ahead of time to keep in your fridge for when you’re ready to cook them.
I purchase my dried apricots from Thrive Market. They have the cheapest apricots I have found, they are organic, and the only ingredient in the package is apricots!
We get our bacon straight from the butcher. We pay $5 a pound, it’s fresh, and it doesn’t contain any nasty fillers or preservatives. You can even request the type of cut you prefer. I highly recommend looking into butcher shops in your community. Not only will this support a small business, but it will definitely save you some money. Also bonus, they taste is WAYYYY better and it will be much easier to find compliant meats!

- 1 lb bacon
- 40 pieces of dried apricot more or less depending on how much bacon you have
- 1 spring of thyme
- 2 tbsp Pure Maple Syrup
Ingredients

- Preheat the oven to 400 degrees.
- Layout the dried apricots on a sheet pan lined with parchment paper.
- Place three leaves of time in the center of each dried apricot.
- Wrap the apricot with a single layer of bacon. Use kitchen sheers to cut off excess bacon. Continue wrapping the apricots.
- Brush maple syrup over the bacon.
- Bake for 13-16 minutes depending on how crispy you prefer your bacon.
- Once the appetizer is finished in the oven allow it to rest about 10 minutes before serving.
- Enjoy!
