Okay, I know I’ve marveled at my own food before. But guys these biscuits are just next level delicious! The honey creates a gentle-sweet center. The biscuits have a modest rise, so you can roll them into the size you will want them to be. It’s so simple to create and if your family is anything like mine, they will demolish these savory biscuits!
I’ve tested out making the perfect biscuits for a while now. It took several attempts to find the right flours and the right techniques to make the perfect one! So be sure to follow the process carefully, as some of the techniques I use are what makes this biscuit just right.
I have a couple of tips: Be sure to add the eggs at room temperature, and don’t skip the heating of the liquids on the stovetop. Be sure to whisk the ingredients together—if it’s challenging by hand, use an electric mixer to be sure you are incorporating as much air as possible. All these techniques will all add to a lighter, flakier roll!
1 c coconut flour
1 c tapioca flour
1/2 t baking soda
1/2 t salt
1/2 cup of olive oil
1/2 cup water
1 T apple cider vinegar
1/4 cup of honey
1 egg
Combine dry ingredients into a bowl with a whisk.
In a small pot on high heat, combine olive oil, water and vinegar.
Once it starts to boil, remove from heat and whisk into dry mixture.
Allow to cool a couple of minutes so the eggs don’t cook. In the meantime, keep whisking to create more air in the batter. Then, whisk in honey and eggs.
Roll batter into balls about 2 inches in diameter.
Bake at 350 for 20-25 minuets or until golden brown.
You can store these in an airtight container for a few days, but I have a feeling they will go quickly! 🙂
