I love pop tarts! Growing up I enjoyed toasting pop-tarts from a box in the morning as a fun breakfast. I miss them! So I decided to make them for myself, after all, I have been craving pop tarts almost my whole pregnancy. These Cinnamon “Sugar” Pop-Tarts are better than the box, they are a healthier, low processed version and simple to make and even freeze–simply pop in the toaster whenever craving strikes!
My favorite pop tart is cinnamon! I wanted to re-create my favorite childhood pop tart so it was a no-brainer to go with these. My Cinnamon “Sugar” Pop-Tarts are flaky, with a warm, sweet, cinnamon center, and smothered in a heavenly cinnamon, vanilla glaze. You are going to want to keep this recipe on hand!

Cooking Tips:
This recipe is adapted from O’ttos Naturals website. I used Otto’s Cassava Flour for the recipe. I just tweaked it a bit to make it dairy-free and Paleo friendly for everyone! In their recipe I replace a flax-seed-egg with a regular egg just because I like the way an egg binds a bit better. Also, I used 1/2 a cup of coconut oil instead of a stick of butter so this recipe can be completely free of dairy. Coconut oil also locks in moisture in the crust so that your pastry crust comes out flaky, and not dry and crumbly.
On the Otto’s website, the recipe suggests filling these pop tarts with jelly. You certainly can do it this way, it is definitely another tasty option if you’re not as crazy about the cinnamon + sugar flavor.
Cassava Flour unfortunately isn’t the cheapest option for paleo flour. However, it is SO easy to work with and the taste + texture comes out pretty amazing, so I do recommend it as a splurge. The cheapest I have seen it is on Amazon. You can actually purchase in bulk if you have the funds, which makes a great option as well. Bulk or not, it is still the cheapest I have found for a 2 pound bag (the smallest option).

- 1 1/4 cup Otto's Cassava Flour
- 1/2 cup Coconut Oil at room temp
- 2 tbsp Coconut Sugar
- 1 tsp Salt
- 1 scoop Collagen I prefer Vital Proteins
- 1/2 cup Cold Water
- 1 large Egg
- 1/2 cup Coconut Sugar
- 2 tbsp Cinnamon
- 3 tbsp Coconut Oil
- 3 tbsp Honey
- 1 tbsp pure vanilla extract
Ingredients

Filling:

- Pre-heat the oven to 425 degrees.
- Add all the ingredients into a mixing bowl, with an electric mixer, stir intermittently between ingredients.
- Split the dough in half. Using the cassava flour to coat a counter top, roll out 1/2 the dough.
- Roll out the dough into one large rectangle. Divide the rectangle into 8 equal rectangles using a knife, or pastry cutter.
- Place rectangles on a well-greased or parchment-lined baking sheet.
- In a small bowl stir together cinnamon and coconut sugar.
- Take about a 1.5 tablespoons of the filling and pour over the rectangles on the sheet pan.
- Roll out remaining dough and cut into equal 8 piece rectangles.
- Using a fork, press edges together.
- Bake for 16-19 minutes, or until golden brown.
- Add coconut, cinnamon, and vanilla in a bowl. Place in the microwave for about 10 seconds. Whisk together.
- Once the pop tarts are cooked and cooled, drizzle the glaze over them.
- Enjoy!
