This is an easy no-bake, no-fuss snack to whip up. It is so simple to throw together and it only takes about 10 minutes, then you can enjoy these all week long!
Storing the Carrot Cake Protein Bites is best in the fridge, in a sealed container. You can keep them this way for up to 5 days. These also freeze well if you want to double the batch or simply can’t finish them all.
Making your own snacks is SO much cheaper than finding paleo compliant snacks at the store. Options like Larabars are so convenient but they are $1 at best. Making your own snacks like these protein bites are a sustainable option for your wallet. I understand how it can be difficult to come up with time to make snacks everyday. I try to prep and store all the snacks for the week Sunday afternoon so these can be convenient to eat throughout the week.

- 1 cup shredded carrots
- 1 cup pecans
- 1 cup unsweetened shredded coconut
- 6 pitted dates
- 1/4 cup Pure Maple Syrup
- 2 tbsp ground flax seed
- 1/2 tbsp Ground Cinnamon
- 1/4 tsp Ground Ginger
- 1/8 tsp nutmeg
- dash Salt
- 1/4 cup Shredded Coconut
- 1/4 cup Coconut Sugar
- 1/8 tsp Ground Cinnamon

- Combine ingredients for the topping into a bowl and stir together. Set aside.
- In a food processor, add in all the ingredients for the protein bites. Process on low until all the ingredients are incorporated together. Just don't over do it--it will only take about 30 seconds.
- Use a tablespoon to scoop out some of the batter and roll it between your hands to form a ball.
- Roll the bites into the bowl of toppings.
- Serve and Enjoy!!
