Paleo Strawberry Hand Pies

It’s about one week until Valentine’s Day! So the clock is ticking to prepare something special! Ah! We still don’t know what we’ll do—most likely it will involve doing something fun as a family and then something romantic at home around the table once the kids hit the bed. {Which is totally perfect!}  We love making these memories and having moments gathered around the table—and  having treats like these handpies for brunch makes us feel extra warm and special just about anytime!

So these handpies are a family favorite that basically gets inhaled by each and every one of us. I tried doubling this recipe just so we could have leftovers but as it turns out, we just finished all those too! We just love them and I know you will too!

What you’ll need:

For the Filling:
1 bag of frozen strawberries
1/4 c maple syrup

For the Crust:
1 cup almond flour
1/4 cup coconut flour
1/3 cup tapioca flour
2 tbsp Coconut sugar, plus 1tbsp set aside
1 tsp baking soda
1/4 tsp salt
1/4 cup coconut oil, room temp, plus 1tbsp set aside
1 egg
2-4 tbsp ice water

-Preheat the oven to 350°
-Start by dumping the frozen bag of strawberries into a medium saucepan on high heat. Once the strawberries begin to melt (after about 5 minuets) pour in the syrup and reduce heat to medium. Stir occasionally.

-Next, mix all dry ingredients together, followed by the wet in a stand mixer until it forms together. Add water as needed by the tablespoon.

-Remove dough from mixer and roll out onto counter top.
*tip: I find using arrowroot flour works best as to cover the work surface so the dough doesn’t stick.

-Cut out large circles and place onto baking sheet lined with parchment paper. (I just used a mug, feel free to use an actual cookie cutter or creative find around the kitchen!)
-By now the strawberries should have thickened and should be a jelly type of consistency. Place even spoonfuls of strawberry mixture on the center of each cut out circle.

-Carefully, fold each circle in half. Don’t worry about pressing it down—the pies will hold together though the baking process.

-Melt 1tbsp of coconut oil and drizzle it on top of the hand pies, followed pie sprinkling coconut sure on top. Bake for 16-18 minuets!
