Chicken Soup

Well our family has all come down with that awful flu that’s been going around this year. Both kids have an ear infection and mom and Dad are running low on fuel. All I could think about is my moms good ‘ol chicken noodle soup that I had as a kid. This is my version of it. This soup is made with chicken or turkey breast so it cooks quickly and you can skip the store for processed broths. It’s easy, it’s delicious and it’s so perfect not only when you’re sick but also when you’re craving a warm wholesome meal!

What You’ll Need:
2 boneless skinless chicken breast or turkey breast cut in cubes
2 large yellow onions, unpeeled, quartered
4 cloves of minced garlic
2 tbsp Olive oil
1 tsp salt
1/2 tsp ground black pepper
4 stalks of diced celery
5 diced carrots
1/4 cup chopped fresh parsley
15 sprigs fresh thyme
10 sprigs fresh dill
8 cups of water

How to Cook:

Sauté onion in olive oil in the bottle on large stock pan. Stir occasionally, then add in garlic.

Add in 8 cups of water to slow the cooking. Add in the remaining vegetables followed by the chicken and then herbs.

Cover and then cook on high until it comes to a bowl. Bring down to a simmer and then cook for an hour.

Serve hot. Enjoy!
