It’s the holiday season and it’s that time of year that we don’t seem to be home very much during the day. I have an exciting advent calendar that I’m trying to keep up with the kids keeping some kind of “manic” ahem I mean “magic” in the air. Today we are going on a holiday train ride! If you know my son Boston, you know how much he loves “choo-choo’s!” So this was pretty much the best day of his life! The whole time on the train he had googly eyes and marveled the scenery as he chanted “choo-choo”—It was an epic day for us all!
With a fun filled afternoon like this if I can keep my dinner a little simpler come the end of the day I’ll take it! I think that’s why we all love our crockpots, am I right?
Well, here is a delicious recipe that will take 20-30 minutes tops to prepare. It is topped with a flavorful herb sauce that keeps the skin on top moist, flavored and even allows it to Crisp! This fall-off-the-bone herb chicken stands out more than any rotisserie bird. You’re going to be making this a part of your recipe staples!
What you’ll need:
1 Whole Chicken
3 onions
1 Whole Garlic
6 Springs of Rosemary
4 Springs of Thyme
1/4 cup of chopped Dill
1/4 cup of chopped Cilantro
1/4 cup of chopped Chives
1/4 cup of olive oil + 1 tbsp
1 tsp salt
1 tsp pepper
Several grinds/dashes of everything seasoning
How to cook:
– Roughly chop three onions and toss into the bottom of the crockpot.
-Set aside 6 garlic gloves and mince the rest to add into the bottom of the crockpot as well.
– Add in 1 tbsp of olive oil and give it a stir.
-Pour in 1 cup of water.
– Rinse chicken with cool water thoroughly, {make sure all innards are removed} then pat dry.
-Now is the time you want to Season the inside of the chicken with about a tsp of each salt and pepper.
-To make the Herb Sauce I simply combine the chopped herbs with 6 minced garlic cloves, stir in 1/4 cup of olive oil and your done! Super simple!
– Apply Herb Sauce to chicken.
*This is where I find it easier to get kind of dirty and use my hands but feel free to use a brush or a tool of the like!
– Top off your chicken with Everything Seasoning (I personally love Trader Joe’s brand but feel free to use what you have in the pantry.)
– Cover and cook on low 7-8 hours or high 4-5 hours. (Or until the internal temperature reads 165°)
-Enjoy!
