So I love a little fruity to my chicken, its one of those things that has to be done juuuust right though. The sweet combo the mango paired with the onion and lime really adds a classic zing to the pallet–you dreaming of this savory dish days after you make it!
My littles ate this so fast which is SO nice to see when at this age they can be so darn picky! I love how the there isn’t any sugars in the meal to overcompensate for flavor but we are truly allowing the fruit to do its work in bringing the true sweetness to the dish.
Mangos are best found on sale though the summer months making this a fantastic and refreshing summer dish. However, its perfect anytime as our local grocery store was having a great sale on mangos here in the spring and we enjoyed this earlier on!

What you’ll need:
1 tbsp coconut oil
1 lb of chicken breast
1 mango
1 red onion
1//8 cup chopped fresh cilantro
1 tbsp olive oil
2 tbsp of coconut aminos
Zest of one lime
Juice of one lime
Salt and pepper to taste
How to Prepare:
- Over a large skillet, melt coconut oil and then place chicken breasts over med-high, heat lightly salt and pepper each side. Cover and cook for about 3 minuets (or until it turns slightly brown. Flip and repeat.
- Once the chicken has been flipped twice on each side cover the chicken with the mango sauce.
- Continue cooking until the chicken is fully cooked (reaches as internal temperature of 165 degrees
- For the mango Sauce: Dice mangos and red onions and place in small bowl. Add in chopped cilantro and then zest lime and juice the lime and add it to the bowl. Stir in the olive oil and coconut aminos.
