Southwest Stuffed Peppers

These Southwest Stuffed Peppers are extraordinary! There are so many ways to make a stuffed pepper but these are by far my favorite! The smoky, tex-mex taste in the filling along with the hardy chunks of sweet potato make this a special dish to serve.

I mean, just look at all the beautiful colors!! You will be eating the rainbow for dinner my friends and your body will thank you! In the bell peppers alone, you are getting 200% of your daily vitamin C intake. There is no better way to ward off the common cold than by consuming your vitamin c with whole foods.

I really like using Trader Joe’s Taco seasoning. It is CHEAP and Paleo friendly. One packet is $0.79 cents and is 6 servings! (I only use about 1/3 of the packet to season the filling.) You can definitely make your own seasoning as well if you have the ingredients at home or use any other paleo-compliant taco seasoning you can find. This recipe is super flexible so don’t over think it. 🙂

 

For my money-saving tip I wold recommend looking for sales on your bell peppers. I have seen that for all kinds of prices some as cheap as a dollar each or as expensive as $6 a pound. Getting these peppers at the right time can take this from a frugal meal to a luxury.

I was able to get these peppers on a sale at $1 each. Which I find is a pretty common price point for bell peppers on sale. So search around before making these and wait for them to be a good price before trying this recipe out.

Also, you can always use jalapenos, sweet chili peppers or really any other kind of pepper if you find your able to get those for a good price or you just would like to add a new flavor to the dish.

 

What You’ll Need:

6 Bell Peppers
2 Tbsp Coconut Oil
1 Yellow Onion
1 Sweet Potato
2 Cloves of Garlic
1 Packet of Taco Seasoning
2 lbs Ground Beef (any ground meet will work)
1/4 cup Chopped Parsley
1/2 cup Chopped Arugula (spinach works too)

How to Prepare:

  • In a large skillet melt coconut oil then on medium heat start sauteing onion.
  • While the onion is starting to cook, peel and dice sweet potato.
  • Add sweet potato to pan stirring occasionally. The sweet potato can easily start sticking to the pan so keep your eyes on it and add more coconut oil of need be.
  • Add chopped garlic to the pan. Give a good stir.

  • Once the sweet potato begins to brown add in the ground beef and taco seasoning, continue to stir.

  • While the ground beef in heating up cut your bell peppers in half and remove the insides. Lay them flat on a parchment lined sheet pan.

  • Once the ground beef is almost done cooking add in the parsley and arugula. Take the pan off the heat. The parsley and arugula will wilt down as well as the ground beef to finish heating through in the oven so there is no need to continue cooking over the stove.

  • Spoon in the filling into the peppers.

  • Place in a 375 degree oven on the bottom rack and cook for 20 minuets.

  • Serve warm. Enjoy!

    Stuffed peppers are the best! Why have I not thought to make a taco version! Geniusssss. Perfect for this time of year when all I want is warm comfort food.

    I LOVE that these are stuffed with sweet potatoes! I feel like stuffed pepper recipes always call for rice or quinoa, and while we aren’t paleo, we do limit our grain consumption in general. I usually make stuffed peppers with just veggies and meat but they always seem to be missing something. Can’t wait to try them with sweet potatoes!
