Roasted Cauliflower

This is one of my fam’s favorite side dishes. It is like comfort food on a sheet pan. The spices on the cauliflower really make this dish so savory. The warmth the spices bring make this cauliflower the dish to have at the dinner table.

This dish is simple to assemble and flexible on the spice—you can easily turn up the heat or kick it down by adding more (or none) of the red pepper flakes.

Cauliflower is loaded with fiber, it’s rich in protein and just one cup will give you 77% of your daily vitamin C needs!

Since cauliflower is packed with protein my money saving tip is to go vegetarian for your lunches! We try pretty hard to consume a diet with mostly veggies. We do our best to eat vegetables instead of meat for breakfast and lunch so we can save more money, reduce our foot print, and save the meats for dinner. Not only does cauliflower make a great side dish at the table, it is a great idea for lunch. You can simply serve this with more veggies, add some nuts or even fruit for sustainable carbohydrates.

This Roasted Cauliflower is fast and easy to make. Simply toss the cauliflower and seasonings in olive oil on a sheet pan and bake in the oven!


Once the cauliflower has baked serve from the pan or in your favorite serving dish!

Instructions
  1. Preheat oven to 375°
  2. Cut cauliflower into bite-size chunks. Place on a parchment lined sheet pan.
  3. Drizzle olive oil and sprinkle seasonings.
  4. Toss the cauliflower on the sheet pan so that the flavors are as even as possible.
  5. Bake at 375° for 35-40 minuets, flipping half way through.
Recipe Notes

If you like a little more spice feel free to add in more red pepper flakes or even add in some cayenne! If you’d like to tone it down simply omit the red pepper flakes!

    I tried roasting cauliflower years ago and it didn’t turn out so well. With your recipe I think I will have success.
