Lunch can get boring with the same ‘ol thing everyday. Once a week I am going to bring out a new recipe to help add more variety in you life!
This week on the lunch menu is a Creamy Salmon Cracker Spread. This is such an easy meal to just whip up and throw in the fridge to save for lunches during the week.
*note: This will last for about 3 days in the fridge so it wont last you all week but at least half of the weekdays. A lot of times we double the recipe so it will last for a family of 4 for a 2-3 days. My hubby enjoys using this as a base in a sandwich but the kids and I really enjoy the crackers. This recipe is very versatile in how you want to serve it so have fun with it and don’t be afraid to try new options.

A great way to get your Omega 3’s without breaking the bank is utilizing canned Salmon. Usually this is how we eat our fish. It is wayyyyy cheaper to purchase Salmon in a can than to get it fresh. So if you’re wanting to get these nutrients in within a budget I would highly recommend trying to get it in the can.
I used the brand Natural Sea. It is sustainable and wild caught and the ingredients are clean. Also, I really appreciate how the skin is included in the can because that is where a lot of the nutrients are in the fish. If you are looking to save a buck, Trader Joes has a clean option and they are the cheapest I have ever seen.

How to Prepare:
Chop all herbs and veggies and dump them into a large bow.
Mash an avocado with a fork (you can usually do this by cutting it in half, removing the seed and then slide the fork down into the avocado. Dump the mashed avocado into the bowl.
Add in seasonings, oil and juice of 1/2 a lemon. Give it a good stir until all is combined.
Serve over crackers, bread or eat with a fork!
