One thing about orange chicken that I love is getting that citrus zing that pecks you back when you take a bite. I love the flavors of this epic dish as its flavor is layered with the perfect amount of sweet and tang you miiiiiight just find yourself licking your plate! {rumor has it–my toddler totally did.}
This orange chicken is so quick and simple to prepare, that you can totally pull this off on a weeknight and not feel overwhelmed. The cooking process allows for the meat to be kept constantly damp so in the end it simply falls right off the bone.
What You’ll Need:
2 tbsp coconut oil
1 lb of chicken drumsticks
Zest of one orange
Juice of one orange
2 tbsp of fresh minced ginger
2 garlic cloves minced
1/4 cup olive oil
1/4 cup coconut aminos
1/4 tsp salt
1/4 tsp paprika
How to Prepare
- Melt the coconut oil on medium-high heat in a skillet. Place drumsticks in the pan and cook for about 3 minutes or until they turn brown. Cover pan.
- Continue turning drumsticks every three minutes each side until each side has been on the pan twice.
- As the chicken is cooking, in a bowl, whisk together the remaining ingredients to make the orange glaze. Add it on top of the chicken.
- Continue turning the chicken every three minutes until the chicken has absorbed the sauce.
- Serve warm. Enjoy!
- We love paring this dish with my roasted carrots! {recipe coming soon!}
