We have snow here in Princeton! The kids l o v e it! Both my hubby and I took a sled with a child on the lap and raced down a hill! It was a freaking b l a s t ! We got so much of it we will be playing in the snow for dayyys!
With us being inside for the cold weather looking forward to warm comfort food is all that’s on the mind.
This is one my favorite dinners for many reasons. Not only can I use one pan for everything but I can throw it together in less than a half hour all while multitasking with the kids. This chicken is so juicy while the sweet glaze punches you in the mouth! I freaking love it!

What you’ll need:
1lb of boneless, skinless chicken thighs
2 tbsp of coconut oil
2 tsp of coconut aminos
4 cloves of garlic
3 tbsp honey
1 tsp of ginger
How to Cook:
Mince garlic and ginger, then combine in small bowl with coconut aminos, and honey
Melt coconut oil on skillet over medium-high heat. Place chicken in pan and cook each side 3-4 min.
After turning once for each side add in sauce. Continue turning every 3-4 minutes until sauce is absorbed.
I also added in cauliflower rice for a side. Simply sauté over high heat with 2 tbsp of coconut oil until it softens. I also added in a few sprinkles of salt, pepper and fresh parsley for flavor!
