5 Ingredient Thumbprint Cookies

It is the holiday season and that means COOKIES! No matter the season though, our family looooves cookies. Well we all do… But this is the time of year where memories are built around the table. I love being able to make holiday treats with friends and fam, together!

These thumbprint cookies are pretty perfect. They have a crisp crunch on the outside and they are soft on the inside. That’s the dream right?

You can use pretty much any jelly or jam to fill the center with. However, finding a clean, sugar free jelly can be quite tricky. I live in a pretty small town so finding your common big box brands are all I can find in a store. Thankfully I was able to find Charles Jacquin Wild Blueberry Spread at a T.J. Maxx Store nearby! Pretty awesome right? Sometimes the best option is to purchase these specialized condiments online so you can guarantee it is compliant, just always check the ingredients yourself.

I use my thumb to create a little hole in these thumbprint cookies–they are after all, thumbprint cookies. I use my thumb because I think it creates a homemade touch as well as a large hole to fill with that delicious jelly. However, if you are looking for a more refined, uniformed cookie you can use the back of a wooden spoon to create that hole. Also, I just use a spoon to spoon-in the jelly. To me, if I have jelly running down the sides it is the best cookie in the bunch. Again, if you are looking for a clean cookie, you can fill a freezer bag with the jelly and cut a hole in a corner to pipe it in. Don’t worry about going one way or another with it–its supposed to be fun! 🙂

 

 

My money saving tip today is to find recipes with as few ingredients as possible to make your favorite foods. Sometimes simplicity is best to really experience the flavor of what you’re making. (Obviously we can’t do that with every recipe, but when the opportunity arises, go for it.) These cookies have just 5 ingredients and they are there is no compromise in flavor, they are a pure indulgence! And if your cabinets are pretty paleo-stocked you probably even have the ingredients on hand!

 

 

 

 

 

What You’ll Need:

1 cup almond butter
1/2 cup maple syrup
1 egg
1/2 cup Coconut Flour
1/4 cup chopped pecans (optional)
Jelly of your choice I used blueberry

How to Prepare:

  • Mix first three ingredients together in a large bowl. Use an electric mixer to stir until combined.
  • Add in the coconut flour and give it one final stir until the ingredients are combined.

  • Fold in pecans.

  • Put the mixture in the fridge and let it set for 5-10 minuets.
  • Roll the cookies into about 1” balls.

  • Make a thumbprint in the center of each cookie.

  • Bake in a 350 degree oven for 10 minuets.
  •  Spoon in jelly into center hole. Return to the oven for another 3 minuets.

  • Remove from oven and let the cookies cool completely.
  • After the cookies are cooled, I sprinkle mine with arrowroot powder for aesthetics but that is completely optional!
