My name is Aimes, I am a wife to JT and momma to Boston, Oakley, and Kaldi! Together, we love to cook and eat our yummy, clean, vegetarian creations and take care of the earth we’ll one day leave behind.
If you have been an avid reader of my blog you will have noticed some recent changes. First, after my postpartum depression journey my health became a center focus. My family and I made so many changes and I need to immerse these principals into my blog; otherwise, it just won’t be “mine” anymore. My recipes are still going to be from whole, real food, (which I was always inspired by with the paleo eating.) However, this time around, they are vegetarian. (FYI I will still keep my non-vegetarian recipes up for those who may want to refer back to them.) My family made the decision to eat vegetarian fall 2020 and we are so glad we did. We feel mentally and physically better knowing we are taking care of the animals and planet. Many readers have found paleo was great for digestive help. I personally found the fermentation process in legumes to be just as nurturing for my gut (and full of healthy fibers and nutrients).
On each post I include an exclusive tip for making the dish on a low budget. Everyone should have the luxury to eat well no matter their budget; therefore, it is important for me to offer this tool for you. I hope you find this helpful!
Budgeting is vital to our family when it comes to our meals. Our family knows what it is like to live in poverty. While my hubby was in grad school we were living on very little and thankfully had things like WIC and SNAP to keep us above water. Even now, we still are stable but live on a tight budget; therefore, practical grocery and meal savings are an important practice for us. In my blog I will give practical tips to get you through your meal planning without breaking the bank.
When I mentioned earlier I wanted to “immerse” my blog I meant it! Ha. You find new sections on the blog related to wellness, activism and my art. I am soon adding sections on mental and physical health, parenting, gardening, ways to become socially conscious and responsible, ect. I think it is really important we make time for ourselves and do some self-care. I hope to inspire us to do our best to take care of ourselves and those around us.
I hope you find yourself here often, creating, loving, and feeling inspired.
with so much love,
aimes
