Cherry Chia Seed Pudding is an easy make-ahead dish. I love being able to make this and use it in my meal plan all week long. This chia seed pudding tastes SO indulging. Its hard to believe it is made with clean ingredients.

Cherries are the perfect summer snack! As a kid, this was my favorite fruit. As an adult, I still love them and enjoy incorporating them into fun meals. This Cherry Chia Seed Pudding brings back those childhood memories of red stained fingers from the messy juice, to the company I shared them with. I love this pudding.

This pudding is great as a snack or even for breakfast. This is also a flexible recipe. Feel free to trade the cherries for a berry. All the measurements and cooking time will remain the same. Its fun to change it up, especially around the seasons.

The cherries complement this chia seed pudding well. Off-season, cherries can get really pricey. During this time I would really recommend trying a berry in this recipe. Go with what is in season, what is on sale, and always check out your local farmers market to see if they have good prices there. When money is tight, skip the fruit. This chia seed pudding holds well on its own without the added fruit inside or in the glaze. The honey and cinnamon combo still give this a rich and tasty flavor.

I really like using this in my meal planning. This is one of those recipes that you can store a portion size in a mason jar and keep in the fridge all week long when hunger strikes!

This Cherry Chia Seed Pudding is a fun, indulgent recipe for breakfasts or snacks! Make it ahead in meal prep and enjoy it all week long!

Instructions
Chia Seed Pudding
  1. Remove pits from cherries.
  2. Add all the ingredients (except chia seeds) for the chia seed pudding into a food processor. Process on high for about 30 seconds or until ingredients are combined. (You don't want to process it too long otherwise you want have chunks of cherries in the pudding.)
  3. Stir in the chia seeds.
  4. Pour mixture into a sealed container. Refrigerate overnight or for about 6 hours.
Cherry Glaze
  1. Pit cherries and cut in half.
  2. Add cherries, honey, and water to a sauce pan. Turn the heat on high.
  3. Once the mixture starts to boil, reduce to med-high and continue to cook for 8 minutes.
  4. Allow cherry glaze to cool. Store in fridge in a sealed container.
  5. Once the chia seed pudding has set, serve topped with the cherry glaze.
